Cake recipe number 10: Low-calorie yogurt cake with cherry jelly

Small-Batch-Sour-Cherry-Jam-No-Pectin-photo-5328[1]Ingredients for the light cake layer:

  • 1 egg
  • 60 g flour (about 2/3 cup)
  • 70 g of sugar (slightly less than 1/2 cup)
  • 2 tablespoons sour cream
  • 1 tsp. baking powder (or 1/2 tsp of hydrated soda)

Ingredients for the dark cake layer:

The same as for a light plus 2 tbsp. of cocoa powder

Ingredients of yoghurt jelly:

  • 700 grams of yogurt without additives (or you can use cherry yogurt)
  • 6 tablespoons of stevia
  • 25 grams of instant gelatin (21/2 liters with a slide)

Ingredients of cherry jelly:

  • 200 g of cherry
  • 3 tbsp of stevia
  • 15 g of instant gelatin (11/2 tbsp)
  • 50 g of black currant (or any other berries for decoration)

Preparation: Prepare a light crust. Whisk eggs a little and add sour cream, after that stir and add flour, baking powder (or quenched soda), whisk to a homogeneous mixture. Put the dough into the preheated oven to 200 degrees. Bake for 15 minutes. Then prepare the dark cake layer: cook exactly the same as a light one, just add cocoa at the time of adding flour. Distribute the dough evenly and bake exactly the same. Ready cakes are carefully separated from the paper, and cool on the grate.

Pour gelatin into a glass, pour half a glass of hot water (not boiling water) and stir thoroughly for about 3-5 minutes until gelatin is completely dissolved. Cool to a warm state, stirring occasionally. Add stevia to yogurt (if yogurt is already sweet, then any kind of sweet should not be added).

Add the dissolved gelatin to the yoghurt (room temperature) and mix thoroughly (if the gelatin is too hot and the yogurt too cold gelatin can curdle). Put a dark cake on the bottom of the split form. Pour half of yogurt. Top put a light cake. Pour the second half of yogurt, smooth the surface.

Put in the fridge for at least 2 hours. Pour cherries with 300 ml of water, bring to a boil and simmer for a couple of minutes. Add the gelatin to the cherry compote and mix it thoroughly for about 3-5 minutes until the gelatin is completely dissolved. In the cake form, put the berries, lightly pressing them into the yoghurt layer.

Advice: Pour cherry jelly carefully and put in the fridge for at least 2-3 hours.
